Halweil shared that government data from the UK and US both show a decline in essential nutrients over the last few decades. The researcher wrote that nutrients—including zinc, iron, calcium, and selenium—have diminished by double digits percentages in common foods and people today would need to consume 21 oranges to obtain the same nutritional value found in a single orange 50 years ago. Halweil warned, “Mineral deficiencies affect billions of poor populations around the world with conditions like iron deficiency related anemia, vitamin A-related blindness, and selenium deficiency related cancers. Even in well-fed wealthy nations, government surveys find that people do not consume sufficient amounts of vitamins and minerals for optimal health. Some nutritionists and crop scientists have suggested that taking mineral supplements or fortifying staple foods with additional nutrients is sufficient to compensate for a diet that is low in major nutrients.
